Bouchot mussels are produced in the Bay of Aiguillon under the local name ” La Charron “. Only the mussel shipping centers of Marsilly, Esnandes and Charron, in Charente-Maritime, and l’Aiguillon-sur-Mer in Vendée, in the south of France, are able to offer this product. are entitled to the Charron appellation. Mizotte is in fact the name of a grass that grows on the salt meadows of the southern Vendée, and which has given its name to one of the best-known Vendée cheeses. Its fruity taste, melt-in-the-mouth texture and amber color make Mizotte a much-loved cheese in Vendée. Unfortunately, it is no longer made in Saint-Michel-en-l’Herm since January1, 2017.

He prepares his dishes using local produce sourced directly from producers.
